Ingredients
1 whole pasture raised chicken (about 4.5 lbs)
340G garlic herb tagliatelle
4 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, chopped
2 cups chicken broth
1 cup cherry tomatoes, halved
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare the Chicken
Preheat the oven to 375°F (190°C).
Rinse the chicken under cold water and pat dry with paper towels.
Rub the chicken with 2 tablespoons of olive oil, salt, and pepper. Place it in a roasting pan.
Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste occasionally with the juices.
Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Step 2: Cook the Tagliatelle
While the chicken is roasting, bring a large pot of salted water to a boil.
Add the garlic herb tagliatelle and cook according to package instructions until al dente. Drain and set aside.
Step 3: Prepare the Sauce
In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Pour in the chicken broth and bring to a simmer. Add the cherry tomatoes, rosemary, and thyme. Cook for about 5-7 minutes until the tomatoes start to soften.
Step 4: Combine and Serve
Add the cooked tagliatelle to the skillet, tossing to combine with the sauce. Season with salt and pepper to taste.
Carve the rested chicken and serve alongside the garlic herb tagliatelle.
Garnish with fresh parsley before serving.
